Krua Lime - Scope of Works Initial Consultation Menu Creation Confirmation of content (Thai / Thai-Asian Fusion / Thai-Western Fusion / Catering etc.) Ingredient sourcing Recipe Card creation Kitchen Staff training Kitchen pre-opening assistance (Specification and sourcing of equipment & utensils etc.) Hygiene specification (Internal fridge layout/temperature control based on FEHD guidelines etc) "Mystery Shopping" Report (As an anonymous guest, checking standards and reporting on all aspects from telephone reservation to order taking, service, food quality & presentation)
Option 1 One-off Appointment Menu Creation Staff training
Option 2 1 - 3 Months Appointment Menu Creation Chef training Ongoing Supervision Spot Check 3 times per week (different meal periods)
Option 3 6 – 12 Month Menu Creation (Festive season / spring menu / summer menu / winter menu etc.)
Option 4 One-off “themed promotions” for Hotels, Clubs & Lounges (Typically 1-2 weeks - “Thai Food Promotion” or “Thai Street Food Promotion” etc)
Option 5 Recipe Sourcing for publications (like this example which appeared in the South China Morning Post [SCMP] Food & Drink supplement on January 26th 2012)
